Our chef Nguyen Ho Phuc is from Vinh Phuc province, which is very close to Hanoi. His family owned a small eatery in their native village. The main dish there was Pho - meat broth with noodles and meat. Ho told us that he was always watching his mother and grandmother cooking traditional Pho all day long. “People work hard, so they must be well-fed,- they said, - If people are well-fed, they work well”. After moving to Hanoi, Ho opened a small cafe, where he cooked, according to his family recipes. It was a great pleasure for him to feed people well. But one day Ho thought: “I want people in other countries taste our famous Fo!” So Ho found himself in Moscow: “Life is boiling here, like the soup in my pot is! People work a lot here, that’s why they have to be well-fed.”
